How to make easy garlic soup

Learn how to prepare this delicious and very simple garlic soup, also known as Castilian soup, with bread, egg and of course, a lot of garlic.

La Garlic soup is an economical dish and very easy to make . It is not necessary that you have experience in the kitchen in order to prepare it and make it delicious.

Like any soup recipe, you may find that it has different versions, depending on where and by who prepares it.

In this post I'll show you three garlic soup recipes: one with chorizo, the "easy" garlic soup and a powerful Slovak garlic soup made with potatoes and milk.

Recipe of garlic soup with chorizo ​​

In Spain the garlic soup is also known as Castilian soup and It closely resembles this recipe to co ntinuación, in fact it could be said that they are the same thing. This delicious soup in its easiest version is made with water, not with broth. The same is not a bad idea to use it if you feel like it.Add the chorizo ​​chopped on wheels and these in turn cut in half. Do not let the garlic burn.
  • Add the teaspoon of sweet paprika, the 4 cups of water, salt and pepper. Mix well and let boil for about 5 minutes.
  • Next put the minced bread in medium pieces and the 2 eggs previously beaten. Stir well and check for salt.
  • Remove from heat and serve. You can sprinkle a little more sweet paprika on top to decorate the dish.
  • How to make easy garlic soup

    The "cheap" version of Garlic soup is even simpler than the chorizo ​​version. This is the one my grandmother used to pamper us at home for many years.

    She does not have chorizo ​​or paprika powder. Yes, it's really cheap. And for memories and feelings, it's my favorite.

    • 4 cups of water
    • 8 cloves of garlic
    • 1/2 loaf

    • 2 eggs
    • Salt
    • Olive oil
    • Pepper

    Preparation:

    1. In a pan, sauté the chopped garlic in olive oil until golden brown.
    2. Carefully remove the garlic from the pot, leave the oil intact .
    3. Add water and chopped bread into small pieces. Let everything boil for a couple of minutes, add the previously beaten eggs and let cook for 3 minutes.
    4. Serve and enjoy.

    Soup recipe Slovak garlic (Cesnaková Polievka)

    A few months ago I was in Bratislava and had the opportunity to share with a group of travelers in the kitchen of the hostel where I stayed. A Slovak girl taught us how to make Slovak garlic soup . It is almost as easy as the other versions, the only variant is that it has cream and potatoes instead of bread. You can also put chopped cheese into cubes.

    • 4 cups of water or broth
    • 8 cloves of garlic
    • 2 large potatoes
    • ½ cup of cream
    • White cheese, chopped in cubes (optional)
    • 2 eggs
    • Salt
    • Pepper
    • Pepper

    • Vegetable oil

    Preparation:

    1. Chop the very small garlic and sauté it in a pan with oil to mid fire. When lightly browned, remove from heat and reserve.
    2. In a large saucepan over high heat, put the water and chopped potatoes into cubes to cook. When they are soft, they break easily, add the garlic with oil, salt, pepper, cream and beaten eggs.
    3. Leave to cook for 5 minutes over medium heat.
    4. If you decided to use cheese, put it right when you put out the fire.
    5. Serve hot.

    If you feel like it, you can change the water by vegetable broth in any of the three recipes to give more flavor to the garlic soup. And in the case of bread, it is not a bad idea to use homemade bread 🙂
